We're testing a cookie sweetened with allulose and monk fruit extract instead of cane or coconut sugar. Allulose is a rare sugar that occurs naturally in figs, raisins, and maple syrup. Your body absorbs it but barely metabolizes it, so it carries a small fraction of the calories of cane sugar and has a negligible effect on blood glucose. Monk fruit extract is many times sweeter than sugar and rounds out the taste.
